Die traditionelle Japaner essen morgens ein oder zwei dieser salzigen Früchte zusammen mit Reis. Ansonsten findet man Umeboshi auch als Bestandteil in Onigiri, zum Beispiel in Bentō-Boxen. Dabei erinnert die rote Frucht inmitten des weißen Reis optisch an die japanische Flagge, was dann als „Hinomaru-Bentō“ (Hinomaru=japanische Flagge) bezeichnet wird.&lt;br /&gt;

===Zubereitung===&lt;br /&gt;
Die noch grün geernteten Aprikosen werden in Holzbottichen zusammen mit Salz in Schichten eingelegt. Das Salz entzieht den Früchten Wasser, während ein beschwerter Deckel diese komprimiert und in der entstehenden Salzlösung hält. Nach ein bis zwei Monaten der Milchsäuregärung werden die Früchte einige Tage im Freien getrocknet. Danach werden die getrockneten weißen Früchte mit roten Shiso-Blättern in dem Umeboshi-Sud eingeweicht und nehmen innerhalb einer Woche die charakteristische Farbe der purpurnen Shiso-Blätter an.&lt;br /&gt;
